The Old Fashioned goes island-hopping through the Caribbean with this cocktail recipe. It's an excellent drink to commence day-drinking (drink responsibly!), or if you're in a cold climate, it helps you day-dream of your ideal tropical paradise.

What is it?

Traditionally, an Old Fashioned cocktail is made with 2 ounces of bourbon, sugar, and bitters. This recipe takes this same recipe format and uses rum instead—effectively making it a Rum Old Fashioned. But the key to this recipe is the use of a very unique and exquisite rum.

What is Pineapple Rum?

The rum in question here is the Plantation Stiggins' Fancy Pineapple rum.

It's an expertly-crafted rum that's a product of a few distillations and infusions of Victoria pineapple. The result is a sophisticated rum with notes of sweet fruit (ripe banana and pineapple) and a spicy and smoky finish. It's delicate and not overly sweet.

One may think this is merely a rum flavored with artificial pineapple flavor. It's not. It's a lot more elaborate and quality-focused all the way. Simply put, it's the good stuff.

Stiggin's is an exceptional rum to sip or to make cocktails with.

How it's made.

The production of Stiggin's Pineapple Rum can be broken down into three steps. According to the distiller, the first step is to infuse the barks of Victoria pineapples and infuse them with their own Plantation 3 Start rum.

Then, it's distilled again.

Then, the pineapple fruit is infused in with their Original Dark rum. Finally, the distillate and fruit infusion are blended together.

Ingredients

2 oz Plantation Pineapple Rum
.5 oz demerara syrup blend
2 dsh aromatic bitters
1 dsh orange bitters

Preparation

Mixed

Garnish

1 pineapple leaf

Edible gold spray

Glassware

Clear whiskey glass

Ice Type

Clear ice rock

Assembly

  1. If you're removing the ice rock from the freezer, take it out and let it "warm up" at room temperature for at least 5 mins.
  2. Trim the pineapple leaf so it accommodates the whisky glass.
  3. Spray the tip of the pineapple leaf with the gold spray. Set it aside to dry.
  4. In mixing glass, add the simple syrup, rum and bitters.
  5. Fill the mixing glass with ice, then stir.
  6. Strain into a rocks glass.
  7. Add one large clear ice cube or regular ice cubes.
  8. Insert pineapple leaf.
